With summer slowly coming to end, I wanted to finish off with a bang and share all of the delicious things that I’ve been devouring in these past summer weekends. I love these What I Eat in a Day videos/blogposts because it gives me a chance to give you a sneak peek into my life and get some amazing food inspiration.
A lot of people think I just eat green smoothies/juices and salads every day and that simply isn’t true! Although I love a good kale salad, I also like to eat a variety of foods and satisfy my body’s cravings, just like everyone else. That being said, if my body is craving chocolate, I’ll satisfy my sweet tooth with one of my brownie bite energy balls or some frozen mango chunks. There’s always a way to give yourself healthy options, even to satisfy all those not-so-healthy cravings.
Many people also ask if I eat only plant-based foods, and the short answer is no. I would say that my diet is made up of about 80% plant-based foods, but I also consume eggs, fish, seafood (my favourite) and on occasion, chicken and pork. Beef does not agree with me nor do I really like it, so I generally don’t include it in any of my dishes.
In a nutshell, I don’t count calories, follow any diets or restrict myself from foods. I actually crave healthy foods because that’s what makes me feel my best. When I crave not-so-healthy things I either give in and seriously regret it, or I make healthified versions, which is usually the case.
Now that we have that all sorted out, lets jump right into the good stuff and tell you guys what I eat in a day on a summer weekend.
WAKE UP- 8:30 am
I like to start my day off with a large glass of alkaline filtered water. Sometimes I’ll add a slice of lemon but it was hot today and I was lazy so straight up water it was.
CUP OF “JOE” 9 am
I gave up coffee a couple of years ago and herbal coffee has saved my life. It has the taste of coffee without the caffeine or side effects. I like Bambu and Teeccino. I simply add 1 tbsp. of Bambu, 1 tsp. coconut sugar, 1 ½ cup of hot water and a splash of my almond milk cream.
BREAKFAST 10:00 am
Who doesn’t like pancakes for breakfast? I love sweet breakys and these banana coconut pancakes with blueberries hit the spot every time. Coconut flour in baked goods can make things a little dry, but adding mashed banana evens it out by adding moisture and sweetness. Get the full recipe here.
LUNCH 12:30 pm
When it’s hot out or I’m filming a video, I make an effort to get my raw veggies in and this sprouted veggie sandwich and my kale salad with lemon dill dressing does just that. Sometimes I’ll have a soup instead of the sandwich or salad, it just depends on what I have in the fridge.
SNACK TIME 3 pm
I feel like it’s so predictable but yes I eat chips and gauc all the time. I LOVE it. The fat from the avocado keeps my tummy full and it keeps me from snacking on sugary junk food. I love blue corn chips but I will also sneak in some carrots and cherry tomatoes at times. The guacamole in this video is store bought because sometimes you just need convenience, but I also love making my homemade guacamole, which you can find here.
DINNER 6 pm
Summer BBQ’s are the best and lately, I’ve been loving a ton of grilled veggies, marinated salmon and a glass of chilled water infused with a few frozen raspberries. This grilled corn salad was inspired by my amazingly talented friend Davida aka The Healthy Maven. She has an awesome food blog and she made me this salad at her place while shooting her chimichurri grilled corn recipe and I’ve been hooked ever since.
DESSERT/TEA 9 pm
I like to enjoy a soothing cup of hot herbal tea at night while I’m either editing or watching Netflix (currently obsessed with Breaking Bad). I’ve also been slightly addicted to Justin’s Dark Chocolate Peanut Butter Cups so I’ve been experimenting with making my own versions. I’m seriously so hungry now after talking about all these delicious foods and all I have is a banana with me on the train while I write this… what was I thinking. - Coconut Flour Banana Blueberry Pancakes: click here
- 2 slices of Ezekiel bread
- 1 tbsp. vegan mayo (I like veganaise)
- ½ roasted red pepper
- ½ avocado
- ½ cup sprouts
- Sliced tomato
- Sliced cucumber
- Sliced red radishes
- 1- tbsp. lemon juice
- Salt & pepper
- 2 fillets of fresh atlantic salmon
- 2 tbsp. balsamic vinegar
- 2 tbsp. olive oil
- 1/2 tsp. sea salt and pepper
- Juice from half a lemon
- 4 cobs of corn
- 1 avocado chopped
- 1 cup sliced cherry tomatoes
- 2 tbsp. olive oil
- 1 minced clove of garlic
- Juice from 1/2 a lemon
- Handful of chopped parsley
- Pinch of sea salt & pepper
- Toast your slices of Ezekiel bread.
- Marinate your sliced cucumber and tomato with lemon juice and pepper for a couple of minutes.
- Next, spread the mayo on your toast and add all your veggies.
- Cut in half and enjoy.
- Pre-heat BBQ.
- In a medium sized bowl, add salmon and top with all ingredients and set aside for 15-30 min to marinate.
- Next, on a sheet of foil lay down the salmon onto the BBQ, pour remaining dressing and cook for 3-4 min per side.
- Wrap corn in foil and bbq for 20-25 min on medium heat.
- In a small bowl, whisk olive oil, lemon juice, parsley and salt and pepper together.
- Cut the corn off the cob and throw into a bowl with the diced avocado and tomatoes.
- Toss in dressing and enjoy.
